The word “chocolate” comes from the Classical Nahuatl word chocolātl, of uncertain etymology, and entered the English language from the Spanish language. The history of chocolate began in Mesoamerica. As the popularity of chocolate spread, growers established plantations in other regions, such as West Africa and South and Southeast Asia. Today, Ghana, Côte d’Ivoire, Nigeria, Indonesia and Brazil account for 79 percent of the world’s cacao production.

As cacao tree seeds have a very intense, bitter taste, they must be fermented to develop the flavor. Once fermented, processors dry, clean and roast the beans. After roasting, the shell is removed to produce cacao nibs. The cacao nibs are then ground into cocoa mass, which is pure chocolate in rough form. The cocoa mass is usually liquefied, then molded with or without other ingredients. At this point in the process, it is called chocolate liquor. The chocolate liquor gets processed into two components: cocoa solids and cocoa butter.

Most Common Types of Chocolate are unsweetened baking chocolate, sweet chocolate, milk chocolate and white chocolate. Unsweetened baking chocolate includes cocoa solids and cocoa butter in varying proportions, sweet chocolate involves cocoa solids, cocoa butter or other fat and sugar, milk chocolate in takes sweet chocolate with milk powder or condensed milk and white chocolate comprises of cocoa butter, sugar, and milk but no cocoa solids.
