More than 85 projects planned or underway through 2030; milk, cheese and cultured dairy lead investment by product category
WASHINGTON: The U.S. dairy processing industry is investing more than $15 billion in new and expanded manufacturing capacity across 23 states, with more than 85 projects planned or underway through 2030, according to a new analysis by the International Dairy Foods Association (IDFA).

The investments cover multiple dairy product categories and include new processing plants, facility expansions, additional production lines and modernization projects. According to IDFA, the projects reflect industry confidence in long-term demand for dairy products, particularly high-protein and nutrient-dense foods, alongside opportunities to expand exports.
IDFA highlights industry confidence in future growth
“America’s dairy industry is investing for growth,” said Michael Dykes, D.V.M., president and CEO of IDFA, pointing to the scale of planned capacity additions and modernization projects across 23 states.
The investment programme comes amid projections that U.S. dairy product manufacturing will outperform the broader manufacturing sector in employment and output growth over the next decade.
According to projections cited in the analysis, dairy product manufacturing employment is expected to increase by 5.6% between 2025 and 2035, compared with 3.5% growth in total U.S. employment and 0.6% in manufacturing overall.
Inflation-adjusted output from dairy manufacturing is projected to rise by nearly 30%, increasing from $138.5 billion in 2025 to $179 billion in 2035.
New York leads state-wise investment
New York accounts for the largest share of the announced dairy manufacturing investments, followed by Texas, Michigan, Wisconsin and Pennsylvania.
Top five states by announced investment
| State | Investment |
|---|---|
| New York | $2.8 billion |
| Texas | $1.7 billion |
| Michigan | $1.43 billion |
| Wisconsin | $1.4 billion |
| Pennsylvania | $1.4 billion |
The geographic spread of these projects highlights the industry’s investment activity across major U.S. dairy-producing and processing regions.
Milk and cheese attract the largest investments
Milk and cream processing account for the largest share of investment by product category, followed by cheese and yogurt and cultured dairy products.
| Product category | Investment |
|---|---|
| Milk and cream | $5.63 billion |
| Cheese | $3.76 billion |
| Yogurt and cultured dairy | $3.07 billion |
| Butter and powders | $1.86 billion |
| Ice cream | $745 million |
The figures indicate substantial investment across both fluid dairy and value-added processing. Projects involving cheese, cultured dairy, butter and milk powders also reflect the breadth of manufacturing capacity being developed across the sector.
Dairy manufacturing’s wider economic contribution
The U.S. dairy manufacturing industry comprises approximately 1,200 processing plants, supplied by nearly 24,000 American dairy farms, according to IDFA.

Across the wider dairy economy, the association reports that the industry supports more than 3.05 million jobs, generates $197.6 billion in wages, contributes $779.45 billion in overall economic impact and generates more than $83 billion in state and local taxes.
Food manufacturing is also projected to add approximately 84,000 jobs between 2025 and 2035, more than any other major U.S. manufacturing sector, according to the figures cited in the analysis.
Manufacturing Month highlights dairy’s role in industrial growth
The investment announcement coincides with Manufacturing Month, observed in October in the United States. IDFA presents the projects as evidence of the dairy industry’s contribution to manufacturing growth through capital investment, technology upgrades and expanded production capacity.
IDFA tracks the projects in partnership with EA Risk and updates its investment map as new information becomes available.
