NDRI Develops Technology to Extend Paneer Shelf Life to 20–21 Days

Scientists at ICAR-National Dairy Research Institute (NDRI), Karnal, have developed a patented antimicrobial technology that can potentially extend the shelf life of paneer from around 8–10 days to 20–21 days, opening new possibilities for reducing wastage, improving distribution and expanding the market for India’s popular dairy product.

The technology uses an antimicrobial coagulant formulation (AMCF) designed to improve the storage stability and microbial quality of paneer while retaining its taste, texture and overall quality, according to NDRI.

The development could be particularly significant for dairy processors and small-scale entrepreneurs, for whom the short shelf life of paneer has traditionally limited transportation distances, inventory management and market reach.

From 8–10 Days to Around 20 Days

Fresh paneer is a highly perishable dairy product, with conventional products typically having a relatively short refrigerated shelf life.

NDRI’s AMCF technology has demonstrated the potential to extend that period to approximately 20–21 days, nearly doubling the conventional shelf life cited by the institute.

The extended storage period could give processors considerably more flexibility in moving paneer from manufacturing facilities to distant markets.

It could also reduce losses caused by spoilage and unsold inventory.

One Formulation, Two Functions

The technology combines coagulating and antimicrobial properties.

According to Dr Pradip Vishnu Behare, Senior Scientist, Dairy Microbiology Division, ICAR-NDRI, the formulation can be incorporated during paneer manufacturing and can also be applied through a dipping treatment.

This distinguishes the technology from conventional paneer-making approaches, where the coagulant primarily performs the function of separating milk curd from whey.

The antimicrobial component is intended to improve the product’s storage stability and microbial quality.

Nearly a Decade of Research

The technology was developed by Dr Pradip Vishnu Behare and his team at NDRI following approximately eight to nine years of research and development.

The technology has now received a patent, marking an important step towards its commercial application.

Research conducted so far has indicated improvements in the shelf life, storage stability and microbial quality of paneer produced using the technology.

NDRI Sees Wider Dairy-Sector Potential

Dr Dheer Singh, Director, ICAR-NDRI, said the development could improve the quality, storage stability and marketability of paneer.

“The extended shelf life will provide greater flexibility in the handling, transportation and marketing of paneer, while supporting wider availability of good-quality paneer to consumers,” he said.

He added that the technology could potentially be adopted by large dairy processors as well as small-scale dairy entrepreneurs.

Why Shelf Life Matters

A longer shelf life could address several practical challenges in the paneer value chain:

Lower wastage: Longer storage could reduce spoilage and product rejection.

Wider distribution: Processors could transport paneer to markets located farther from manufacturing centres.

Better inventory management: Retailers and distributors would have more flexibility in stocking the product.

Higher market reach: Small dairy businesses could potentially access markets beyond their immediate locality.

Greater value addition: Improved storage stability could make paneer processing more commercially attractive.

Could Help Small Dairy Entrepreneurs

Paneer is produced by businesses ranging from large organised dairy companies to local sweet shops, restaurants and small dairy entrepreneurs.

For smaller processors, limited shelf life can be a major constraint because products need to be sold quickly and transportation must generally remain within a manageable geographic radius.

A validated shelf-life extension technology could potentially allow such businesses to produce, package and distribute paneer over a wider area, provided the technology meets applicable food-safety and regulatory requirements.

Commercialisation Now the Next Step

NDRI Director Dr Dheer Singh said the technology is ready for commercialisation and is expected to become available to the dairy sector for wider use.

The transition from laboratory and research validation to commercial deployment will be the next important stage.

For large-scale adoption, the technology will need to demonstrate consistent performance under commercial processing, packaging, refrigeration and distribution conditions, while maintaining the sensory and nutritional characteristics expected from paneer.

A Potential Shift in Paneer Logistics

The significance of the innovation extends beyond shelf life.

If commercial adoption proves successful, extending paneer shelf life from roughly 8–10 days to 20–21 days could change the economics of its supply chain.

A longer shelf life can potentially allow processors to consolidate production, serve distant markets, reduce returns and improve utilisation of distribution networks.

That could be particularly valuable as India’s organised dairy sector expands and branded paneer moves into more cities.

The Bigger Picture

NDRI’s patented AMCF technology addresses one of the most persistent challenges associated with paneer: its high perishability.

The potential to nearly double shelf life could help bridge the gap between production and consumption, particularly for organised dairy companies seeking to expand paneer distribution beyond regional markets.

The bigger opportunity, however, will depend on successful commercialisation and adoption.

If the technology performs consistently at industrial scale while meeting food-safety and regulatory requirements, it could become an important tool for reducing dairy waste, improving paneer logistics and expanding the market reach of value-added dairy products.

For India’s rapidly formalising paneer sector, that could be a significant technological advantage.
