El Paso dairy shifts focus to A2 milk, aiming for affordability, accessibility

The Sarah Fresh Factory in El Paso is making a significant shift in its dairy production, focusing on A2A2 milk, which is said to be closer to the milk produced by cows thousands of years ago.

Starting July 1, the factory will exclusively produce A2A2 milk, a move that aims to address common milk sensitivities and provide a more natural product.

“A2A2 milk is just milk how it should naturally be,” said a representative from the factory.

Historically, cows produced A2A2 protein casein, but overbreeding led to a genetic mutation resulting in A1A2 protein casein, which is prevalent in Europe, the United States, and Australia. In contrast, most cows in India and Africa still primarily produce A2A2 protein.

The factory has been working for three years to create A2 herds by genetically testing cows and breeding those with the A2A2 protein. “We find the A2 cow and we separate them from the A1A2 cow,” said the representative. This process ensures that all milk from the factory will be A2A2, eliminating the mixing of different protein types.

The shift to A2A2 milk is also seen as a solution for those who experience milk sensitivities. “A lot of people that have sensitivity are just coming up lactose and cholera because they can’t digest it and they’ve got mislabeled,” said the representative, explaining that the issue often lies in the protein rather than lactose.

The factory is committed to making A2A2 milk affordable and accessible. “We do low-temperature pass through trying to keep it as fresh as possible fresh local affordable and on the shelf everywhere,” said the representative. The goal is to provide a product that is not only beneficial for health but also accessible to the local community.

The factory’s efforts are particularly aimed at communities with high lactose intolerance rates, including Asian, Hispanic, and African-American populations. “We want everyone to drink milk,” said the representative, emphasizing the importance of making milk accessible to all.

As the factory prepares for this transition, they are also focused on keeping the product affordable for local consumers. “We need to leave it here because it’s our communities we need to keep a cheap affordable for these people,” said the representative.

The Sarah Fresh Factory’s move to A2A2 milk represents a significant step in addressing milk sensitivities and providing a more natural dairy option for consumers.
