New Delhi: Amid rising concerns over food adulteration, the Food Safety and Standards Authority of India has introduced a simple 5-minute home test to help consumers detect adulteration in ghee—one of India’s most widely used kitchen staples.

Why Ghee Purity Matters

Pure ghee is valued for its rich flavour and nutritional benefits. However, adulteration with vanaspati or hydrogenated fats can:

Simple Home Test Method

The test can be performed easily using basic household items:

Materials Required:

  • 1 ml melted ghee
  • 1 ml concentrated hydrochloric acid (HCl)
  • Half a teaspoon of sugar
  • A test tube or small glass container

Procedure:

  1. Take melted ghee in a container
  2. Add hydrochloric acid
  3. Add sugar
  4. Shake the mixture vigorously for about 2 minutes
  5. Allow it to settle into layers

Interpreting the Results

  • Pure ghee: No colour change
  • Adulterated ghee: Acid layer turns crimson red or pink

The appearance of red or pink colour indicates the presence of vanaspati or similar adulterants.

The test works on a basic chemical reaction:

  • Hydrochloric acid breaks sugar into simpler compounds
  • These form furfurals upon dehydration

  • This reaction produces a red/pink colour

Pure ghee lacks these reactive compounds, so no colour change occurs.
