A small Canadian clinical study is challenging the long-standing assumption that consuming full-fat dairy products necessarily contributes to weight gain or higher cholesterol.

Researchers found that adults consuming three servings of full-fat dairy products daily for 12 weeks did not experience significant increases in body weight, body composition or blood lipid levels compared with participants following a low-dairy diet.

The study, led by Harvey Anderson of the University of Toronto, involved 74 adults with overweight or obesity and was published in The Journal of Nutrition.

What did the study find?

Participants were divided into three groups: a calorie-restricted low-dairy group, an energy-neutral group consuming three servings of dairy daily, and a group consuming three dairy servings without energy restrictions.

After 12 weeks, researchers found no meaningful differences in weight, body composition or cholesterol levels between the groups.

However, participants consuming more dairy recorded improvements in blood pressure and increased their intake of calcium, protein and vitamin D.

Why does full-fat dairy matter?

Full-fat dairy has traditionally been viewed cautiously because it contains saturated fat, which has been associated with increased LDL cholesterol and cardiovascular risk. Dietary recommendations have therefore often encouraged consumers to select low-fat or fat-free dairy products.

The Canadian findings suggest that evaluating dairy solely on its saturated-fat content may not capture the complete nutritional picture.

Researchers pointed to the “dairy matrix” hypothesis—the idea that the physical structure of whole dairy foods influences how nutrients are digested and absorbed.

Milk contains a combination of casein and whey proteins, fat, minerals and other nutrients, which interact within the food matrix. Consequently, the physiological response to consuming whole dairy may differ from what would be predicted by examining saturated fat in isolation.

Potential relevance for older adults

The findings could be particularly relevant to older adults, who often need to maintain adequate protein, calcium and vitamin D intake while managing lower energy requirements.

Dairy products can provide several of these nutrients in a relatively compact food source, potentially making them useful in diets where nutrient density is important.

But experts caution against overinterpreting the findings

The study does not prove that full-fat dairy is healthier than low-fat dairy, nor does it establish its long-term effects.

The research involved only 74 participants and lasted 12 weeks, meaning larger and longer-term studies are needed before drawing firm conclusions about cardiovascular or metabolic health.

The key takeaway is therefore not that everyone should switch to full-fat dairy, but that the health effects of whole foods may be more complex than judging them by a single nutrient such as saturated fat.

The researchers’ broader message is particularly relevant amid constantly changing nutrition advice: focus on dietary variety, moderation and overall diet quality rather than treating one nutrient as the entire story.
