New Delhi: As the intense summer season continues, roadside shabeels (free refreshment stalls) have once again appeared across markets, highways, temple areas, and residential colonies in Delhi, offering relief to people struggling with extreme temperatures.

These stalls are serving kachi lassi, Rooh Afza milk sharbat, and chilled drinking water free of charge to passersby.

Rising Number of Visitors

Organizers report that visitor numbers have increased significantly in recent days, particularly during the afternoon when temperatures are at their highest.

Harishankar Tripathi, who has been running a roadside shabeel near Tilak Nagar for the past eight years, said:

“We start preparations by 7 a.m. because after 11 a.m. the crowd becomes continuous.”

According to him, most visitors are delivery workers, laborers, auto-rickshaw drivers, and motorcyclists who spend long hours outdoors in the scorching heat.

Increasing Costs for Organizers

While these community-run stalls provide much-needed relief, organizers say that operating large shabeels has become increasingly expensive due to rising demand and higher milk prices.

Lajwanti Kaur, who helps manage a shabeel near Karol Bagh, explained that their stall uses approximately:

  • 120 liters of milk daily
  • 35 kilograms of curd
  • Nearly 25 blocks of ice
  • Several bottles of Rooh Afza

She noted that during peak heatwave conditions, the daily operating cost can easily exceed ₹18,000.

Preference for Packaged Milk

Organizers said they generally rely on milk from brands such as Amul and Mother Dairy because loose milk tends to spoil quickly in the summer heat.

They also pointed out that purchasing ice has become one of the largest recurring expenses, as maintaining cold beverages throughout the day requires a constant supply.

A Community Tradition

Despite the rising costs, shabeels remain an important community tradition during North India’s harsh summers. By providing free refreshments and hydration, they offer essential support to outdoor workers, travelers, and residents seeking relief from the heat.
