Sensient Flavors & Extracts has launched two new yeast-based fermentation technologies, Amberferm Grow 288 and Amberferm Grow 289, aimed at helping dairy culture manufacturers increase yields, improve culture performance and support product innovation without making additional capital investments in fermentation infrastructure.

The new technologies address a growing challenge for dairy culture producers: how to increase fermentation efficiency and output as demand rises for cultured dairy products such as yogurt and cheese.

Dairy culture production relies on microorganisms to ferment milk and generate the desired characteristics of cultured products. Improving the efficiency of this fermentation step can therefore have a direct impact on production economics, culture activity and downstream product performance.

Doubling fermentation yield in some applications

According to Sensient, Amberferm Grow 288 and 289 have demonstrated improvements in fermentation yield and culture activity across a range of dairy culture strains.

In some applications, the company says the technologies have doubled fermentation yield compared with an industry-standard fermentation nutrient. This could allow manufacturers to increase culture production using existing fermentation capacity rather than immediately investing in additional tanks, utilities or processing infrastructure.

The potential benefit is particularly relevant for dairy culture manufacturers operating plants where fermentation capacity is becoming a production bottleneck.

Focus on yield, culture activity and process optimisation

Sensient BioNutrients says the new ingredients are designed to deliver benefits in three key areas: fermentation yield, culture activity and downstream application optimisation.

As fermentation nutrients, the technologies have shown improvements in packed cell volume (PCV) yield, an indicator associated with the amount of biomass generated during fermentation.

Higher biomass yields can enable manufacturers to produce more culture from the same fermentation infrastructure, potentially improving asset utilisation and production economics.

The company also reports improved acidification activity in dairy cultures. For yogurt and other fermented dairy products, acidification is a critical process characteristic because starter cultures convert lactose into lactic acid, influencing fermentation time, texture, flavour and product consistency.

Improved culture activity could therefore provide manufacturers with additional opportunities to optimise fermentation and finished-product performance.

Designed beyond traditional fermentation nutrition

Sensient says Amberferm Grow 288 and 289 were developed specifically around the requirements of dairy culture manufacturers rather than functioning simply as conventional yeast extracts.

“Our goal was to develop more than just another yeast extract,” said Gayathri Venkat, senior innovation manager at Sensient BioNutrients. “We wanted to create a fermentation ingredient designed specifically around the needs of dairy culture manufacturers.”

The technologies are also positioned as tools for product development. Manufacturers could use improved fermentation performance to optimise existing culture-production processes or explore new applications while maintaining desired culture characteristics.

Dairy fermentation moves toward higher efficiency

The launch reflects a wider trend across the dairy and food-processing industries toward technologies that allow manufacturers to produce more from existing infrastructure.

For dairy culture producers, improving fermentation yield can offer an alternative to capacity expansion, particularly when demand is increasing but manufacturers want to control capital expenditure.

The approach also aligns with the broader evolution of the dairy sector toward higher-value products, including yogurt, fermented beverages, cheese and other cultured dairy applications.

Amberferm Grow 288 and 289 are currently available in North America and Europe.
